fig fermentation

I picked a fig, put it in a clean airtight container, put it in the basement and forgot about it for about two weeks. When I opened it, it smelled like vinegar, or like it had fermented. There was no sign of mold: no fuzz. I decided to taste it. Took a nibble and it was good: like it had pickled in its own juices. I ate the whole thing and found it delicious. My stomach felt fine afterwards. I tried to repeat it -- another fig in a container in the basement -- but the second time, fuzzy mold formed. I have not tried it again.

My question is: What happened? Can the good result be repeated?

Hmmm....

Don't know what to tell you. With an airtight container, it would be more likely to ferment than turn into vinegar. Sounds like your edibility test showed you're onto something good!

No expert, but I say: keep experimenting :)

Note to self -- plant fig tree next...
